I had to begin with a bang, right?
These are the honest to goodness most delicious cupcake we’ve had in quite some time. I’ve been working on this recipe. Tweaking it to create the absolute best dreamy vanilla cupcake that we all desire but never get. You know what I’m talking about. Vanilla cupcakes tend to be dry and dense. They often lack that fluffy quality that makes a cupcake perfection. These cupcakes are light, fluffy and are full of rich flavour. I’m in heaven.
I’ve been working on these for a while now. Almost every gathering or holiday we’ve had in the last few months has featured one form of these or another. I’ve finally found perfection. It’s the perfect indulgence when you need one.
Vanilla Cupcake Perfection
Ingredients:
1 c unsweetened soy milk
1/2 tbsp apple cider vinegar
1 1/4 c all purpose flour
2 tablespoons cornstarch
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2/3 c white sugar
1/2 c melted earth balance butter
1 tbsp vanilla extract
Heat the oven to 350.
Prep your muffin tin with liners or lightly grease.
Combine the soy milk and apple cider vinegar in a small bowl. Set aside.
In a large bowl combine the flour, cornstarch, baking powder, baking soda, salt and white sugar.
Add the milk mixture, melted butter and vanilla to the dry ingredients.
With a large wooden spoon stir until there are no large lumps and the batter is very smooth. A few small lumps are fine.
Bake in the oven for 22 minutes.
Remove and enjoy!
Extra Information:
These cupcakes take exactly 22 minutes in my oven. They may take more or less in yours. Just keep an eye on things around the 20 minute mark and find your own perfect temperature.
I threw together a tasty icing without too much thought. Start with a cup of icing sugar, a tbsp of cocoa powder, add a tsp of vanilla and a small (extremely small) amount of soy milk. Keep adding milk tsp by tsp until you have the right consistency. It’s very easy to use too much milk but that can be corrected by adding some more sugar. If you’re feeling particularly indulgent replace some of the milk with melted earth balance.
